Makes a yummy breakfast-on-the-go or afternoon snack! These will give you plenty of energy to get through your day or even as a post-workout snack.
2 cups Medjool dates, pitted and chopped (about 20 dates)
1-cup raw sunflower seeds
1-cup raw pumpkin seeds
½ cup unsweetened cocoa powder
½ cup unsweetened shredded coconut
3 tbsp. cold water
1- Place the dates, seeds and cocoa powder in a food processor. Pulse until coarsely chopped.
2- Add the coconut. Pulse again, adding the water a little at a time until the mixture becomes moist but not sticky.
3- Press firmly into a 9-inch square (23 cm x 23 cm) baking dish. Chill for 1 hour before serving.
