Strawberry & Banana Ice “Cream”

Who doesn’t love a cool refreshing ice cream on a sweltering summer day? With warmer weather ahead, you may be considering stocking up on your favourite ice cream flavours. But what if there was an alternative to those sugary cold treats? That’s right! This recipe is for those who want or need to cut sugar, are lactose-intolerant, vegan or just want to try something new!

 

Two ingredients and a blender or food processor is all you need for this delicious snack. It can be made with any fruit, but we chose banana and strawberry because they can help contribute to your eye health.

 

Since bananas have been found to contain high levels of carotenoids, they are recommended to help maintain healthy eyes. Carotenoids is a compound that gives vegetables and fruits their red, orange or yellow colour. This compound is processed by our livers and converted into vitamin A which our eyes need for their proper function. Strawberries compliment the banana by providing a big dose of vitamin C. This helps to protect your eyes against diseases such as age-related macular degeneration. Vitamin C also provides much needed antioxidants that can help prevent dry eyes. Plenty of health benefits in these two simple ingredients!

 

This recipe is sure to be loved by your entire family! The sweetness and creaminess of the bananas and tartness of the strawberries will have everyone convinced they are having the real thing!

 

INGREDIENTS

 

4 ripe bananas, the riper the better

1 lbs strawberries, washed and hulled

 

INSTRUCTIONS

  1. Peel the bananas. Slice them as well as the strawberries into ½ inch pieces. Place them in a single layer on a tray and freeze them overnight.
  2. Place the frozen fruit in a food processor or blender (it is best to use a powerful blender for this recipe). Keep mixing and scraping the sides until the mixture is smooth and creamy. Be patient, it may take a little while.
  3. Serve immediately or you can freeze it. If you choose to freeze it, take it out for a few minutes before serving it. It will be easier to scoop it out.
