Lex Albrecht’s favourite smoothie

Smoothies are a versatile, delicious and efficient way to make a post ride or midday meal. I use a powerful blender and frozen fruits and ice cubes to get a thick consistency that feels like ice cream, but packs a nutritious punch with less calories.  I absolutely love tweaking recipes to play with the textures and flavours.  Here’s one of my latest creations that I have been enjoying regularly.  It tastes great, and it’s good for your eyes too! The vitamin C boost may help decrease the risk of age-related macular degeneration as well as cataracts. Give it a try the next time you want a cool, refreshing snack!

Ingredients:

- 1 tray of ice cubes

- 1000-1500 mg vitamin C (use any type of tablets, 500 to 1000 mg. It’s not only healthy, it will also give a tang to your smoothie)

- 2 tbsp beet juice powder or concentrated beet juice supplement (I use the Salus brand of powder, it tastes the best.  Fruity and juicy, without any earthiness)
- 1/2 cup frozen raspberries
- 1/2 frozen banana (I keep a stash of peeled bananas in my freezer at all times.  I break them in half before freezing them to use for smoothies, in my oatmeal and for baking.)
- 10-20 g of vanilla whey isolate protein powder
- 40 g (approximately) plain tofu (this will give your smoothie a rich texture, and provide added protein)
- 1 tbsp maple syrup or other sweetener (like Stevia).

Blend until smooth, and enjoy right away, or freeze in a bowl and eat a little later on!
