Fresh Spring Roll Recipe

The fresh, crisp and colourful ingredients all wrapped in a pretty little package perfectly embrace spring. Spring is around the corner and in it’s honour, we are suggesting this delicious and healthy recipe! Plus, you can really customize your rolls to make them exactly how you like them. We do suggest using some of the ingredients listed below because many of them contain nutrients that your eyes can benefit from. 

Our eyes require certain vitamins and nutrients in order to function properly and for their general health as well as to prevent certain ocular diseases, like macular degeneration and cataracts. We highly suggest incorporating omega-3 fatty acids, vitamins A, C and D, as well as lutein and zeaxanthin into your diet. Although there are quite a few nutrients, they can easily be ingested in just one meal. This recipe includes the nutrients listed above through the salmon, cilantro, avocado, carrots and cucumbers. All delicious and simple ingredients in one small parcel that is incredibly beneficial for your eyes. Just a few minutes of preparation but with long-lasting benefits!

INGREDIENTS
12 8-inch rice paper wrappers
8 oz vermicelli noodles

Choose the protein of your choice:
6 oz of sliced smoked salmon
8 large cooked shrimp, deveined and cut in half
3/4-cup imitation crabmeat shredded

Choose your favourite veggies:
1 carrot cut into matchsticks
1/3 English cucumber cut into matchsticks
1/2 ripe avocado, sliced lengthwise
1 green onion cut into matchsticks
2 lettuce leaves, chopped

Choose your favourite toppings:
Small bunch of chopped cilantro
Small bunch of chopped Thai basil

Small bunch of chopped mint

INSTRUCTIONS
1. Cook the vermicelli noodles as indicates on the package.
2. Fill a shallow bowl with hot water to a depth of 2 inches. Dip 1 rice paper wrapper in the water for a few seconds to soften, set on a wooden cutting board or a clean, moist dishtowel. In a row across the centre of the wrapper layer your chosen protein, a handful of vermicelli and your selected veggies and toppings, leaving about 2 inches uncovered on each side. Fold uncovered sides inward, and then tightly roll the wrapper. Repeat with remaining ingredients.
3. Pull bottom of the rice paper over the filling, using your fingers to prevent it from spilling out the sides. Fold opposing edges of the rice paper to overlap the filling roll up tightly towards the top. Place the spring roll seam side down on a plate.
4.We suggest dipping these rolls in a dipping sauce. You can easily make your own or you can buy your favourite!
5.Repeat the steps with remaining the rice papers and ingredients. And, why not, change it up and choose completely different ingredients for all your other rolls? 

Note that, if your rolls do not look picture perfect, do not fret! They will still be delicious!
